Sarıkaya lies within the founding area of the Hittite Empire. The district has historical remains and written works from the Roman period. Sarıkaya was a village of the Boğazlıyan district until 1935, when it was made a sub-district centre. The settlement became a district centre with the same name in 1957. Following the Ottoman–Russian War of 1878 (the Russo-Turkish War of 1878, known in Turkey as the 93 Harbi), Kars refugees who had left Eastern Anatolia settled in some of the district’s villages.
When the settlement was a village of the Boğazlıyan district until 1935, it was made a sub-district centre by the Governor of the time, Bekir Sami Baran. In 2018 it was added to UNESCO’s Tentative List of World Heritage Sites.
